How do you improve on perfect? By adding a little spice! This chai spiced Banana Bread recipe is a crowd favourite. Add any of our mushroom powders so you don’t have to feel guilty reaching for that extra slice.
Ingredients
- 125g Unsalted butter, room temp
- 1 Cup Granulated sugar
- 2 Eggs, room temp
- 1.5 Cups Plain flour
- 1 Tsp Baking soda
- 2 Tbsp TAKe Bio Actives mushroom powder (any variety)
- ¾ Tsp Ground cardamom
- ¾ Tsp Cinnamon
- ¾ Tsp Ground ginger
- ¼ Tsp Allspice
- ¾ Tsp Salt
- 1 Cup Mashed ripe bananas (2-3 Bananas)
- ½ Cup Sour cream
- 1 Tsp Vanilla extract
- ½ Cup Walnuts (optional)
Method
Heat oven to 180 degrees. Grease 21cm x 11cm pan
- Add butter and sugar into a large bowl or mixer and beat until light and fluffy (approx 2 mins). Add in eggs, one at a time, beating well after each.
- In a separate bowl, mix together the dry ingredients: flour, baking soda, mushroom powder, cardamom, cinnamon, ginger, all spice and salt.
- Add the dry ingredients to the butter mixture and beat gently until just combined. Add mashed bananas, sour cream and vanilla extract and mix until just combined. If using, fold nuts in gently.
- Pour batter into the pan and bake for 60-70 minutes. Rest in the pan for 10 minutes before transferring to a cooling rack to cool off completely.
